Chicken Soup with Jujube Dates and Goji Berries
Chicken soup is the perfect remedy for a winters day, when you’re feeling unwell or when you just need a quick pick-me-up. This chicken soup recipe is a Chinese spin on a classic with the addition of jujube dates and goji berries.
The red dates are used to sweeten the soup but are also good for maintaining your blood pressure. The goji berries are classified as a superfood in the West. In the East goji berries are believed to enhance the immune system.
You can use any cut of chicken, from drumsticks to the thigh.
This soup doesn’t take any time to prepare. However, it takes around an hour to cook to allow the chicken to absorb the flavours.
